A plain guide to Italian wood furniture craft: how a joinery workshop works, restoring an old piece, choosing species and finishes, and the panels behind

Italian wood furniture begins in a small workshop, not a factory. A bench, a bandsaw, a stack of air-dried boards and one person who knows how the grain runs. That is the unit that has shaped kitchens, wardrobes and dining tables across the country for centuries, and it is still the unit that repairs them. Anyone trying to understand how a piece is made, or how to get one fixed, is really asking about four things: the joinery workshop, the restoration of an old piece, the choice of species and finish, and the panel and veneer materials that sit behind a fitted interior. What happens inside a joinery workshop

A joinery workshop is organised around the movement of wood, not around machines. Boards arrive and are stacked to acclimatise, because timber moves with humidity long after it leaves the mill. In a small Italian shop this stack may sit for weeks under a sheet, with stickers between the layers so air passes through. Only then does the wood go to the jointer and the thickness planer.

The bench work is where the piece is decided. A mortise and tenon joint, cut by hand or with a hollow chisel mortiser, holds because the shoulders meet cleanly, not because of glue. Dovetails on a drawer, a wedged through-tenon on a table apron, a housed shelf in a wardrobe: these are the joints that let a piece be taken apart and tightened again decades later. Screws and biscuits are faster, and they are used, but they are not what a restorer hopes to find when a drawer front comes loose.

Finishing happens last and takes the longest. Sanding through the grits, raising the grain with water, sanding again, then a first coat that is often wiped back almost to nothing. A workshop that rushes this stage produces a table that feels like plastic under the hand.

Restoring an old piece: repair or replace?

The first question with any old furniture is whether the original material can carry the load again. A chair with a split seat rail can usually be repaired. A chair whose back legs have been shortened and re-drilled twice may not be worth the labour, and a restorer will say so.

Structural repair comes before cosmetics. Loose joints are opened, cleaned of old glue with warm water and a scraper, and re-glued with hide glue, which is reversible. This matters: hide glue can be softened again in fifty years, while polyurethane cannot, and a future repair becomes destructive. Splits are closed with cramps and sometimes a butterfly key set across the grain. Missing veneer is patched with a piece of the same species, matched for figure, not simply for colour.

Surface work is where most damage is done by amateurs. Stripping a nineteenth-century walnut chest with a caustic dip removes the patina and often the grain itself, because the dip attacks the softer earlywood. A restorer will clean instead, using solvents and fine abrasives, and will re-polish with shellac or a wax that can be renewed. Worm holes are treated, not filled with coloured wax that later shrinks and falls out.

A useful rule: if the repair cannot be undone, it is not a restoration. It is a rebuild.

Which wood species and finishes suit a home?

Species choice is a question of hardness, movement and how the piece will age.

  • Oak is hard, open-grained and stable once dry. It takes a clear finish well and shows dents rather than scratches. European oak is the default for tables and floors.
  • Walnut is softer than oak but works cleanly and holds detail. Its colour lightens over decades, which is why old walnut can look almost honey-toned under a clear coat.
  • Cherry darkens with light exposure. A new cherry kitchen will not match a five-year-old one, and no finish prevents this.
  • Beech is dense, pale and cheap, which is why it appears in painted furniture and in chair frames. It moves more than oak and needs a stable indoor climate.
  • Chestnut and fir are common in older Italian furniture, especially in country pieces. They are softer, and they dent.

Finishes divide into three families. Oils and waxes sit in the wood, feel warm and can be spot-repaired, but they need reapplication. Shellac and lacquer sit on the wood, give a harder film and a clearer sheen, and are harder to patch invisibly. Water-based polyurethane is durable and low-odour, but it can look flat on open-grained species. For a kitchen worktop, a hardwax oil is often the practical answer because a scratch can be sanded out locally. For a dining table that will be wiped daily, a lacquer is easier to live with.

What sits behind a fitted interior?

A fitted wardrobe or kitchen rarely uses solid wood for its carcass. It uses panels, and the panel is where most of the cost and most of the technical regulation lives.

Particleboard, known in the trade as chipboard, is made from wood chips bonded with resin and pressed. It is flat, stable and inexpensive, and it is the standard substrate for melamine-faced carcasses. Its weakness is water: a leak behind a sink will swell the edges permanently. Medium-density fibreboard, MDF, is finer and machines cleanly, which makes it the choice for routed doors and painted fronts. It sags under load over long spans unless it is thick or supported.

Plywood is layers of veneer glued crosswise. It is strong, holds screws at the edge and resists moisture better than particleboard, which is why it appears in drawer boxes and in wet rooms. Blockboard, strips of softwood glued side by side and faced with veneer, is traditional for shelving and doors in Italy and remains common.

Veneer is a thin slice of real wood, typically between 0.5 and 0.6 millimetres, glued to a substrate. It is not a fake. A veneered walnut door uses a fraction of the timber of a solid one and moves far less, which is why veneer is standard on quality fitted furniture. The craft is in the matching: book-matched panels, where two consecutive leaves are opened like a book, produce a mirrored figure; slip-matched panels repeat the grain in sequence. A poorly matched door looks like a printing error.

Edge banding covers the exposed panel edge. It can be a strip of the same veneer, a plastic tape or a solid wood lipping. Solid lipping survives knocks; thin tape does not, and it is the first thing to fail on a cheap kitchen.

How do you judge the work before you commission it?

Ask to see a joint, not a photograph. A workshop that will show you a drawer with dovetails, and let you open and close it, is telling you more than any brochure. Ask what the carcass is made of, and whether the edges are lipped or taped. Ask what finish is on the top and whether it can be repaired on site.

Ask about moisture content. Kiln-dried timber for interior furniture is usually brought to around 8 to 10 per cent, and a workshop that does not measure it will produce doors that bind in summer. Ask where the wood comes from, and whether the panel supplier holds the certifications the workshop claims.

Finally, ask what happens in ten years. A piece built with reversible glue, solid lipping and a finish that can be renewed will still be repairable. A piece built with staples, tape and a two-pack lacquer over a swollen chipboard edge will be replaced. The difference is decided at the bench, long before the furniture reaches the room.
